Geology: Clayey-limestone (various), schistous soils and sandstones soils
 

Altitude: 150 to 300 m
 

Grape varieties in the AOC area: Syrah, Mourvèdre, Grenache, Carignan
 

Grape varieties in the VDP area: Sauvignon blanc, Piquepoul blanc
 

Pruning methods: Bilateral Cordon, Goblet and trellised Goblet
 

Planting density: 4400 to 5000 vines per hectare
 

Soil maintenance: The soils are worked according to agroecological principles maintaining a natural plant cover

Vine protection: “Intelligent”, environmentally friendly spraying certified High Environmental Value and Organic Farming (HVE and AB in French).

Harvest: Hand-harvesting, in crates, with sorting in the vineyards
 

White wine vinification:
Direct pressing, then:
- Fermentation in barrels for the Grand Vin (now Canopé)
- Fermentation in stainless steel tanks for the Classic

 

Red wine vinification:
De-stemming, crushing, then:
- Traditional vinification (4 to 6 weeks’ maceration) then:
- Malolactic fermentation in barrels for mourvèdre and syrah
- Malolactic fermentation in concrete tanks for grenache and carignan

 

Maturing:
- On the lees, with stirring for the wines in barrels (Grand Vin Rouge and Blanc)
- In tanks and on the lees for the Classic (Red and White)

 

Finishing the wines:
Red: not fined or filtered
White: fined with bentonite (if necessary), slight filtering
